烤酥皮牛肉咖喱角和烤沙丁鱼卷 Baked Mini Beef Curry Puff & Sardine Rolls

牛肉咖喱馅料Beef Curry Ingredients:
牛肉切小块300克
马铃薯3粒(煮熟切小粒)
大洋葱1粒(切粒)
2汤匙肉类的马来咖喱粉(加适量的水)
1茶匙Chili Bo
蒜末和洋葱末
咖喱叶几片
香茅1条
300g Beef (cubed)
3 small Potatoes (boiled & diced)
1 big onion (chopped)
2 tablespoons meat curry powder (mix with some water)
1 teaspoon Chili Bo
minced garlic & onion
some curry leafs 
1 stalks lemongrass
牛肉块用少许盐,糖,胡椒粉,生粉和生抽稍微腌制
热油锅炒香蒜末和洋葱末,加入马来咖喱粉和Chili Bo
再炒香,然后加入大洋葱, 牛肉块翻炒大约2-3分钟,
加入马铃薯粒, 适量的盐和水,加入咖喱叶和香茅
再翻炒大约2-3分钟至稍微干即可,待冷备用
Marinate beef with salt, sugar, pepper, cornstarch and soya sauce 
Heat wok with oil fry the minced garlic and onion for about 1 minute
add in the meat curry powder with added water
fry for another 1-2 minutes
stir in the marinated beef, add in the potatoes,
add in some water, salt, curry leafs and lemongrass
stir fry another 2-3 minutes until dry 
keep cool and set aside 

沙丁鱼卷馅料Sardine Rolls Ingredients:
沙丁鱼1小罐
胡椒粉适量
可以加洋葱末和辣椒
1 small can Sardine
Salt & Pepper
(optional - onion and chili)
将沙丁鱼搅烂,加入少许盐,糖,胡椒粉拌匀备用
Remove Sardine from can without the oil,
add in pepper and salt, mix well

酥皮材料Pastry Ingredients:
300克面粉
150克牛油
冰水适量
盐少许
蛋黄一个打散(用来涂抹表面)
300g all purpose flour
150g butter/margarine
cold water 
pinch of salt
1 egg yolk (for coat the surface of puff)
酥皮做法:
将牛油在面粉里切成小块
混合好的牛油面粉看上去应该是像粗玉米粉的样子
place the flour in a medium bowl and add in salt and butter 
cut the butter in the flour
the butter and flour mixture will look like coarse corn
然后慢慢的加入冰水,揉成面团
直到面团柔软, 用保鲜膜包好
好冷藏30分钟
gradually add in the water
knead to form a soft dough
wrap the soft dough with plastic wrap
refrigerate for at least 30 minutes
牛肉咖喱角做法:
将适量的牛肉咖喱馅料放入酥皮内,包好褶花边
用蛋液涂抹表面
Scoop 1 teaspoon of beef curry mixture onto the round pastry
wrap and pleated, coat the surface with egg yolk

沙丁鱼卷做法:
将适量的沙丁鱼馅料放入酥皮内,卷好用叉刺小孔
用蛋液涂抹表面
Scoop 1 teaspoon of sardine mixture onto the square pastry
roll up and use fork to make some holes
coat the surface with egg yolk

放入预热烤炉180度,烤大约20-30分钟
Bake in the preheat oven for about 20-30 minutes
