Coca-Cola Chocolate Cake

Recipe ( from Cake Keeper)1 3/4 cups unbleached all purpose flour1 cup granulated sugar ( i reduced to 1/2 cup)1 cup packed light brown sugar ( reduced to 1/2 cup)3/4 cup unsweetened Dutch processed cocoa powder2 tsps baking powder1/4 tsp baking soda1/4 tsp salt2 large eggs1 cup sour cream1/2 cup vegetable oil1 cup Coca-Cola1tsp vanilla extractIcing sugar for dusting( optional)
1.Preheat oven to 350F/177C. Grease the inside of a 9" round springform pan or baking tin.2.Whisk together the flour, granulated sugar, light brown sugar, cocoa powder, baking powder, baking soda and salt in a large mixing bowl. Whisk together the eggs, sour cream, oil, Coca-Cola and vanilla in another bowl.3. With a woodern spoon, stir the Coke mixture into the flour mixture until just combined. Do not overmix.4.Pour the batter into the prepared pan.Bake until a toothpick inserted in the center of the cake comes out clean, 55minutes to 1 hour.5.Set the pan on a wire rack and let cool for 5 minutes. Run a pairing knife around the perimeter of the pan to loosen the cake from the pan sides, releasing the sides. Use a large spatula to slide the cake from the bottom to a wire rack. Let cool completely. Dust heavily with icing sugar, cut into wedges and serve.

Cola Icing ( taken from here, made1/2 of this recipe )1/2 cup butter1/3 cup coca cola3 tbsp cocoa powder16oz powdered sugar1 tbsp icing sugar
Directions: Bring first 3 ingredientsto a boil in a saucepan over medium heat, stirring until butter melts. Remove from heat, whisks in sugar and vanilla.
