红烧凤爪 Braised Chicken Feet

材料
鸡爪
冬菇(泡软切大块)
八角和丁香花
干辣椒干
生姜片
蒜末和洋葱末
糖,老抽,生抽,绍兴酒各适量
Ingredients
Chicken Feet (washed and cleaned)
Dried Mushroom (soaked and cut into pieces)
star anise and lilac
dried chili (soaked and cut into small pieces)
sliced ginger
minced garlic and onion
sugar, soy sauce, thick soy sauce, shao xin wine
将鸡爪剪去指甲及指窝处的老茧,洗净;
放入沸水中煮约2分钟,捞出沥干
以蚝油,老抽,生抽,绍兴酒各适量腌制至少2小时
烧热油锅稍微煎炸腌制的鸡爪,捞出沥干油
place chicken feet in the boiling water for about 2 minutes
remove and drain
with oyster sauce, soy sauce, thick soy sauce
shao xin wine marinate at least 2 hours
heat 2 tablespoons cooking oil in wok
stir fry the marinated chicken feet for about 2-3 minutes
drain oil and set aside
起油锅,炒香生姜片,加入辣椒干,蒜末和洋葱末再炒香
然后加入鸡爪翻炒几下后加入适量的水(水要淹过鸡爪),
加入冬菇, 八角和丁香花
调味:糖、老抽,盐适量,慢火焖大约1小时至熟变软
heat oil in wok, fry the sliced ginger for about 1-2 minutes
add in dried chili, mince garlic and onion 
fry for another 1-2 minutes
add in the fried chicken feet and stir fry 
add in water (to cover the chicken feet)
add in dried mushroom, star anise and lilac,
add in seasoning: sugar, soy sauce, thick soy sauce, salt
simmer in low heat for about 1 hour until soft
再用太白粉水勾芡
大火收干即可
thicken the sauce with corn starch 
and serve hot
